Step 1: For step one you'll want to take out a large baking dish and then cover it with aluminum foil. Make sure that you cover the baking dish with the foil entirely. You may also use a large grill pan if you prefer.

1/4 Teaspoon of Salt
1/4 Teaspoon of Black Pepper
3 Minced Jalapeno Peppers
2 Minced Garlic Cloves
1 Medium Size Vidalia Onion

Step 2: Next set your oven temperature to 350 degrees F, or 175 degrees C. I recommend baking the burgers on your top oven rack.
Step 3: For this third step you'll want to finely mince your jalapeno peppers and garlic cloves. Next finely chop your medium size Vidalia onion. Other onion varieties will work with this recipe as well.
Step 4: Take out a large mixing bowl and then add into it the ground buffalo meat, large shelled egg, salt, black pepper, minced jalapeno peppers, minced garlic cloves, and the chopped medium size Vidalia onion. Using clean hands manually mix all of these fresh ingredients together until you have a nice even mixture. Proceed to form approximately three inch patties. A single pound of ground buffalo meat will usually yield about 4 evenly sized patties.
Step 5: Line your buffalo burgers out on the foil lined baking dish or grill pan. Make sure that there is plenty of space between the burgers, as this will allow them to cook evenly.
Step 6: Slide your baking dish or grill pan into the oven. Let the burgers cook for about 12 minutes uncovered on each side, or until they're done. Please bear in mind that buffalo meat is extremely lean and thus it cooks way faster than beef and other forms of ground meat. If this is your first time cooking buffalo meat then I would recommend keeping a close eye on the burgers while they're in the oven, just to make sure they don't overcook.
Step 7: Remove the buffalo patties from the oven once they're done. Let them cool for 5 to 10 minutes before serving them. Serve them in the sesame seed topped buns with your choice of toppings and condiments.
Storage: These delicious spicy buffalo burgers will stay fresh for 48 to 72 hours if well stored. To properly store the burgers place them in a sealable glass or plastic container without their buns, toppings, or condiments. Place an airtight lid on the container and then place it into the refrigerator. The burgers can be eaten cold or reheated on your stove top in a pan.
